Ingredients
Fresh torn spinach
1 (8 oz) can sliced water chestnuts-drained
4 hard-boiled eggs-chopped
6 bacon strips- cooked and crumbled
1 small onion-thinly sliced
In large bowl combine spinach, water chestnuts, eggs, bacon and onion. You may add chicken for more protein.
Hint:
Prepare the salad ingredients ahead of time so they are ready to combine together at the last minute.
Dressing
1/2 C brown sugar
1/2 C vegetable oil
1/3 C vinegar
1/3 C ketchup
1 T Worcestershire sauce
In a blender, mix dressing ingredients. Just before serving salad, pour dressing over salad and toss.
